Let us discuss a recipe for a hobo stew for a minute, shall we? How to make a hobo stew? It is actually quite simple. It might seem like a lot of work, but the recipe has a lot of ingredients, so that is why it gives you an impression of something that needs to be cooked for a long time. 

 

You will need: 

  • 1 lb. ground beef
  • 1 onion (chopped)
  • ½ cup celery (chopped)
  • 2 garlic cloves (minced) 
  • 2 tablespoons flour
  • 3 cans V8 juice
  • 1 can tomatoes (diced)
  • 2 carrots (diced)
  • 2 cups corn
  • ½ cup peas
  • 1 ½ cups green beans
  • 1 ½ cups beef broth
  • 2 potatoes (diced) 
  • Salt and pepper to taste
  • ½ cup sweet pepper (chopped)
  • ½ cup hot pepper (chopped)
  • Oil
  • A dash of hot sauce (optional) 

 

How to make hobo stew – instructions:

 

  • Use a Dutch oven or a large pot. Heat the oil. Toss the onion, celery and peppers. Stir for 5 minutes. Add the meat and garlic. Cook until the meat gets browned. You may get rid of an excessive fat from the meat. 
  • Sprinkle flour over the meat and cook it for few more minutes. 
  • Pour the beef broth, V8 juices and add the diced tomatoes.
  • Stir for one minute and then add corn, potatoes, peas, carrots and green beans. 
  • Add a drizzle of a hot sauce and season the mixture with salt and pepper.
  • Gently stir the mixture, adjust the stove to a low-heat mode, cover the pot and let it simmer for 1 ½ hours (wait for the veggies to get tender). Make sure to stir occasionally. Sometimes, the hobo stew needs to be cooked for almost 2 hours.
