  • 2 large eggs
  • ½ cup milk

 

Ingredients for the frosting:

  • 2 cups powdered sugar
  • ½ cup dairy-free butter replacement
  • 1 tsp vanilla extract
  • 2 tbsp milk (can be dairy-free)

You will need:

  • ½ cup unsweetened applesauce
  • ¼ cup avocado oil
  • ½ maple syrup
  • ¼ cup dairy-free milk
  • 1 tablespoon vanilla extract
  • ¾ cup potato starch
  • 1/3 cup cornstarch
  • 2 teaspoons baking powder
  • 2 cups almond flour
  • a bit of sea salt

 

Now, let us talk about the preparation process. It might seem like a lot of ingredients to collect, but all the items that are needed here are the key-elements when it comes to achieving a delicious and fluffy vegan cupcake. Cornstarch will give structure to your cupcakes and the potato starch will give them the tasty fluffiness. 

 

You may also prepare a frosting to your cupcakes, but it is totally up to you! You can make it from some vegetable shortening, gluten-free sugar, coconut milk and vanilla extract. 

 

Let us start baking! 

  • You may start by preheating the oven to 3500 F.  Prepare cupcake liners and a muffin pan.
  • Prepare a mixing bowl. Combine dairy-free milk, avocado oil, applesauce, maple syrup, vanilla extract. Whisk the entire mixture.
  • Then add potato starch, cornstarch, baking powder, almond flour and a pinch of sea salt. Whisk to combine all the ingredients, so that there are no lumps. We are aiming here to get a thick consistency. If it gets a bit too thick, you can always pour a little bit more dairy-free milk. And if the mixture seems a bit too watery, then add more almond flour to make it denser. 
  • Pour the batter into the cupcake liners.
  • Bake for 25 minutes. Check if they are ready with a toothpick test - if the toothpick inserted into the center comes out clean, then it means that your delicious gluten-free vegan cupcakes are ready to be taken out from the oven. 
  • Let the cupcakes cool for few minutes. After that, take them out from the pan and let them sit on a cooling rack. 

 

Once they cool completely, you may top them with a frosting of your choice.
