    You will need:

Crust 

  • 5 tbsp butter (unsalted, melted)
  • 2 tbsp sugar
  • A pinch of salt
  • 1 ½ cups graham cracker crumbs (you may crush them in a food processor or a blender)



Cheesecake filling (all ingredients should be in a room temperature)

  • 32 oz cream cheese
  • 2 cups sugar
  • 6 eggs
  • ½ cup sour cream
  • 3 tbsp flour
  • 4 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • A pinch of salt

  • Start with wrapping a 10-inch springform pan with a large piece of aluminum foil. Make sure to cover the underside. Spray the pan with a cooking spray inside.

  • In a large mixing bowl, using an electric mixer - beat cream cheese, flour, sugar and vanilla extract. Once the mixture is well combined, add lemon juice, lemon zest and salt. Mix it with an electric mixer on low speed. Slowly start adding eggs and then add sour cream. Make sure that the batter is not over-mixed. You can always add a bit more flour, but not too much – we want to reach that creamy consistency.
  • Pour the filling over the crust. 
  • Pour the boiling water into a larger pan (it can be a roasting pan)
  • Put your cheesecake pan in a larger pan with water, so that the water reaches up to 1-inch.
  • Bake for 1 hour and 30 minutes. In some cases – you might need those additional 15 more minutes. As we all know – sometimes it depends on the oven.
  • You may put the cheesecake in another water bath to let it cool. 
  • Once the cheesecake cooled, you may put it in the refrigerator for at least 6 hours. It is better if the cheesecake stays in the fridge overnight. 
  • You can serve the New York Cheesecake with some strawberry sauce on top – it is totally up to you.
